Sarson Ka Saag
Traditional Punjabi winter saag made with cold-pressed mustard oil.

Ingredients
- 1 kg Mustard Greens (Sarson)
- 250g Spinach (Palak)
- 3 tbsp Cold Pressed Mustard Oil
- 2 Onions, chopped
- 1 tbsp Ginger-Garlic paste
- 2 tbsp Maize Flour (Makki ka Atta)
- Salt to taste

Wash and chop the mustard greens and spinach. Boil them with a little water and salt until soft.

Blend the boiled greens into a coarse paste, adding maize flour to thicken.

In a heavy pan, heat cold-pressed mustard oil until it smokes. Add onions and ginger-garlic paste and sauté.

Add the blended greens paste. Simmer on low heat for 30 minutes, stirring regularly.

Serve hot with Makki di Roti and dollop of white butter or ghee.
